I'm trying out the extrude modifier and it seems to work pretty easily, but it only moves the face. Does anyone know if you can extrude a face, keep the existing face where it is, while still creating depth? Also, when I do a test render, the back of the surfaces do not render. How do I get them to do so?

One way to do it would be to go under the modify panel, select polygon, edit geometry roll out panel, 'inset' option to create another face that you can then extrude and then expand out to match the original face... if that makes sense. Look under the Box Modeling tutorial on Lynda.com under 3dsMax 2010. It can probably explain it more clearly than this post.
